Mushroom & Herb Pizza Appetizer

By A Couple Cook- Sonja Overhiser

Ingredients

1 ball Best Pizza Dough (or Food Processor Dough or Thin Crust Dough)

1 ½ Cups sliced mixed mushrooms (baby bella aka cremini, button, shiitake, and oyster)

1 Tbsp each finely chopped fresh thyme and oregano, plus more sprigs for topping

¼ tsp plus 1 pinch salt kosher salt, divided

1 Tbsp olive oil, plus more for drizzling

1 Tbsp fresh lemon juice

1 to 2 ounces goat cheese, crumbled

¾ Cup shredded mozzarella cheese

1 to 2 Tbsp finely chopped chives

Semolina flour or cornmeal, for dusting the pizza peel (flat pizza handle thingy)

Directions

1. Make the pizza dough of your choice. (I used store bought!)

2. Preheat to 500°F. OR preheat your pizza oven.

3. Clean mushrooms, then slice them. In a sauté pan or skillet, heat the 1 tablespoon olive oil to medium high heat. Add the mushrooms, chopped herbs, and ¼ teaspoon salt and cook for about 5 minutes, stirring occasionally. When mushrooms are tender, reduce the heat to low, add lemon juice. Remove from the heat.

4. Dust a pizza peel (or rimless baking sheet) with cornmeal or semolina flour). Stretch the dough into a circle; Then gently place the dough onto the pizza peel/baking sheet.

5. Brush a thin layer of olive oil onto the crust. Then top with the mozzarella cheese in an even layer, then cooked mushrooms, and crumbles of goat cheese. Garnish with the chopped chives and additional thyme sprigs. Sprinkle with 1 pinch salt.  

6. Use pizza peel to put in oven. Bake the pizza until the cheese and crust are nicely browned, about 5 to 7 minutes in the oven (or 1 minute in a pizza oven). Slice into pieces and serve immediately.

Long Island Baked Clams Appetizer by Birtle

            Ingredients

    1 Tsp garlic powder

    1 Tbsp diced onion

    1 tsp chopped parsley

    Oregano to taste

    1/2 cup Italian bread crumbs

    2 Tbsp Olive oil

    1 can (10 oz) minced clams (with liquid)

    Salt to taste

    1 Cup Parmesan cheese (6 Tbsp)

    Paprika to taste

    

            Directions

1. Preheat over to 375.

2. In a frying pan, heat oil. Add garlic, onion, parsley, oregano, and bread crumbs and sauté for about 2 minutes, until onion begins to brown slightly. 

3. Add salt and clams. Mix.

4. Take clam shells and spoon mixture into each. Sprinkle lightly with cheese and crumbs.

5. Place on baking sheet and bake for 25-35 minutes, or until tops are crusty.

6. Sprinkle lightly with paprika and serve hot. 

Serves 18

1/2 fluid oz. gin

1.2 fluid oz. tequila

1/2 fluid oz. triple sec (orange flavored liquor)

1 fluid oz. cola (to flavor)

1 fluid oz. sweet sour mix

1 lemon slice

Pour ingredience into cocktail shaker  with ice.  (except lemon slice). Cover and shake!  Pour into cocktail glass, garnish with lemon slice! Enjoy!

Episodes 20:  Southern Pimento Cheese Spread Recipe

2 cups shredded extra-sharp Cheddar cheese

8 oz cream cheese, softened

½ cup mayonnaise

¼ tsp garlic powder

¼ tsp ground cayenne pepper (optional)

¼ tsp onion powder

1 jalapeno pepper, seeded & minced (optional)

1 (4 oz) jar diced pimento, draimed

Salt and pepper to taste

Directions: Place the Cheddar cheese, cream cheese, mayonnaise, garlic powder, cayenne pepper, onion powder, minced jalapeno, and pimento into the large bowl of a mixer. Beat at medium speed, with paddle if possible, until thoroughly combined. Season to taste with salt and black pepper.
