Ep 159-161: NY State Stirato 'Stretch Bread' and Hot Tomato Oil Recipes

 

STIRATO BREAD AND SYRACUSE-STYLE HOT TOMATO OIL RECIPES



Ingredients

3 cups unbleached all-purpose flour

1 1/4 tsp salt

1 tsp dry active yeast

1 1/2 cup warm water

Directions

1. Mix the dry ingredients together in a large mixing bowl. 

2. Slowly add watr, and stir with a wooden spoon until dough become solid enough to mix by hand.

3. Work the ingredients together until combined; the dough will be slightly sticky.

4. Cover the dough in the mixing bowl and let it rise for 4 hours (a tea towel works perfectly). Place the bowl in the oven with the oven light on (provides just enough warmth).

5. Directly place, shape and stretch the dough on a sheet of parchment paper that is resting on a preheated baking stone (450 degrees). 

6. Cover the loaf with an upside-down roasting pan. 

7. Bake for 20 minutes at 450, then remove the roasting pan; bake for another 20 minutes until the bread is golden brown. If you tap it with your finger, it will sound hollow.

Syracuse-style Hot Tomato Oil


Ingredients 

*1/2 cup olive oil
*3 garlic cloves, sliced
*2 tsp red pepper flakes (or 2 small chili peppers)
1 (28 0z) can of San Marzano tomatoes
1 Tbsp honey (optional)
Salt to taste

*Let the olive oil, chili flakes and garlic marinate in a cup fo 10-30 minutes before preparing (the longer the better!)
Directions 
1. In a large pan, heat olive oil over medium heat. Add sliced garlic and red pepper flakes. Saute until garlic is golden and fragrant (2-3 minutes).

2. Carefully crush tomatoes, mixing with the optional honey. Still well until combined.

3. Mix the olive oil with the tomato mix thoroughly.

4. Lower the heat and let it simmer 30-45 minutes. Oil will separate from the tomatoes, and the sauce will thicken to a rich consistency.

5. Taste, and adjust with salt as needed. Serve- Dip Stretch bed into oil! 

*for best results, use fresh chili pepper or cayenne instead of flakes.
