BAKED BRIE AND CRANBERRY BITES

INGREDIENCE
15 phyllo cups
4 oz. Brie Cheese
1/2 Cup dried cranberries or 1/2 can of cranberry sauce
2 springs of fresh thyme
DIRECTIONS
1. Place the phylo cups on a cookie sheet and preheat the oven to 350° .
2. Remove the rind from the brie cheese, cutting the cheese into small bites.
3. Place the brie bites into the center of the phyllo cups.
4. Add 3-4 dried cranberries or spoon a dollop of cranberry sauce into each phyllo cup.
5. Add 2-3 small thyme leaves on top of the Brie.
6. Bake in the oven for 10-12 minutes until the cheese is melted and the cups are golden brown. Remove from heat and serve while warm.
NOTE: You can score a loaf of sourdough bread, stuff the brie and cranberries in between the cuts in the bread. Brush the stuffed loaf with melted butter, and bake at 350 until the cheese is melted.
