Ep 102-104 Arkansas Possum Pie Recipe

 

 Arkansas Possum Pie



Ingredients for PECAN SHORTBREAD CRUST

1 Cup all-purpose flour

1/2 Cup Salted Butter

1/4 Cup Brown Sugar

3/4 Cup chopped pecans


PUDDING LAYER

1 Cup Granulated Sugar

1/3 Cup natural unsweetened cocoa powder

3 Tbsp Cornstarch

2 Tbsp flour

Pinch of salt

3 Eggs

2 Cups whole milk (yes, whole)

2 Tbsp salted butter

1 tsp vanilla extract


CREAM CHEESE LAYER

8 oz. cream cheese softened

1/2 Cup heavy whipped cream

2 Tbsp powdered sugar

1 tsp vanilla extract


WHIPPED CREAM LAYER

2 Cups Heavy Cream

1/2 Cup powdered sugar

1 tsp vanilla extract

1-2 Tbsp chopped pecans

grated chocolate for decoration


DIRECTIONS


CRUST 

1. Preheat oven to 350 degrees. 

2. Melt butter. Combine with flour, brown sugar and pecans. Press into bottom of a 9 inch pie pan.

3. Bake 15-20 minutes (the edges turn brown). Remove, cool completely. 

CHOCOLATE LAYER

4. Combine sugar, cocoa powder, cornstarch, flour and salt in a medium sauce pan, whisk well. 

5. In a separate bowl, combine egg YOLKS and milk, whisk well. Then add to sugar/cocoa mixture in the saucepan, whisking to combine. 

6. Cook over medium heat, whisking constantly until pudding begins to thicken and bubble (7-10 minutes).  

7. Remove from heat and add butter and vanilla, stirring until the butter is melted and combined.

8. Transfer the chocolate pudding to a shallow bowl and cover with plastic wrap to prevent a 'skin' from forming, then refrigerate for 30 minutes to help the filling to cool off. 

9. When filling is mostly cool, and the cream cheese layer is ready, remove plastic wrap & stir. Spread over cream cheese layer.  Cover the pie with plastic wrap and refrigerate for 4 hours until set. 

CREAM CHEESE LAYER

10. In a medium bowl, mix the cream cheese, powdered sugar, heavy cream and vanilla using a hand mixture until smooth.  Spread over the bottom of the cooled pecan pie crust. (Now put the chocolate pudding layer on top of the cream cheese layer). 

WHIPPED CREAM TOPPING

11. Beat the heavy cream, powdered sugar and vanilla with hand mixer until whipped cream forms and holds shaped when the beaters are removed (stiff).

12. Spread the whipped cream over the top of the chocolate pudding layer. Sprinkled with a handful of chopped pecans and chocolate sharving before slicing and serving.
