Ep 99-102 : In My DNA ~ Dark Chocolate Nut Bark

 

DARK CHOCOLATE NUT BARK 

Especially chosen for Lindsey Wade, who love chocolate covered almonds! 

INGREDIENTS

1/2 cup chopped almonds (unsalted)

1/2 cup sliced almonds (unsalted)

1/2 unsalted cashews

2 Tbsp honey or maple syrup

1 Tbsp coconut oil (or other neutral oil)

1 1/2 tsp of vanilla

1/4 tsp of salt

1 cup dark chocolate chips or candy bar, chopped into bits

1/4 cup dried cranberries



DIRECTIONS


PART 1: DIRECTIONS NUTCLUSTERS

1. Preheat over to 300, and line pan with parchment paper. 

2. In a small bowl, mix all nuts together. 

3. In a microwave safe bowl, add honey and coconut oil, microwave until hot. Add vanilla and salt and stir.  

4. Pour over nuts until they are fully coated.


PART 2: DIRECTIONS FOR CHOCOLATE BARK

5. Line pan (cookie sheet) with parchment paper. 

6. Add chocolate to a microwave safe bowl, microwave for 30 seconds. Still, and microwave for another 20 seconds. Repeat until your chocolate has almost melted entirely, stirring as necessary.

7. Pour onto your pan, spreading into one thin, even layer. Sprinkle dried cranberries onto the chocolate. Add pieces of nut clusters on top, spreading them throughout until the chocolate is well covered. Gently press into chocolate. 

8.Let cool on the counter for a few hours or place in refrigerator for 20 minutes.

9. Once hardened, break Dark Chocolate Nut Bark into pieces (makes about 16 pieces)
