GENTLEMEN'S WHISKEY BACON JAM RECIPE
(Watching the Triple Crown races? Try this! Straight from Kentucky!)
Ingredients
1 lb of bacon, cut into small pieces (you can use turkey
bacon, SAVE the grease)
1 yellow onion, finely chopped into ¼ inch pieces (3 cups)
2 large shallots, diced (1 cup)
2 tsp garlic, minced
½ cup brown sugar (I used Brown Sugar Splenda)
¼ cup maple syrup
2 Tbsp apple cider vinegar
1tsp chili powder
3 Tbsp whiskey (could be Bourbon!)
Directions
1. In a medium saucepan over medium heat, cook bacon until
crisp. While it is cooking, line a place with paper towels.
2. Place cooked bacon on the lined plate; set aside.
3. Keep about 4 Tbsp of bacon grease in the pan, removing
the remainder.
4. Add onion and diced shallots to the pan. Reduce heat to
medium-low. Cook until onions are caramelized- about 15-20 minutes, stirring
often.
5. Mix in garlic, brown sugar, maple syrup, apple cider
vinegar and cooked bacon pieces.
6. Remove pan from heat and add the whiskey. Still well.
Place the pan back on the heat.
7. Simmer for 10-12 minutes or until the mixture has
thickened to the texture of jam.
8. Serve warm or at room temperature (warm slightly if it
has been refrigerated).
This will last in an airtight mason jar in the refrigerator
for about 2 weeks. If you freeze it in
an airtight mason jar, leave about an inch of space at the top for expansion.
Serve Gentleman Whiskey Bacon jam on crackers, add to your charcutier, pork chops, steaks or
grilled chicken, top pancakes or waffles, a burger or even grilled cheese! It
is amazing- sweet, with a little bite from the chili powder.
