Paleo-Pecan Pie and Lustau Dry Oloroso Don Nuno
for Midnight Assassin by Skip Hollandsworth (Epi 52, 53, 5)
1 9 inch pie shell
1/2 cup of maple syrup
2 Tbsp. coconut sugar
2 Tbsp. molasses
1 egg yolk
1 tsp vanilla
1/4 tsp lemon juice
2 Tbsp. coconut oil
1 1/2 cup chopped pecans
1/4 cup pecan halves to decorate.
1. Preheat oven to 375 F.
2. Combine all ingredients except pecans. Stir well to mix completely.
3. Add chopped pecans and mix.
4. Pour into pie crust, use pecan halves to decorate top of pie.
5. Bake 30 minutes until middle of pie is no longer "jiggly".
6 Cool pie before serving- I like a dollop of whipped cream on top!
