IOWA PARTY BITES RECIPE!

Ingredients

10 oz bag of Tostitos scoops tortilla chips

1  8 oz. block of cream cheese, softened

8 oz. shredded mozzarella cheese

1 egg

1  15 oz can of sweet corn, drained

1  4 oz. can of green chillies, mild or medium

1 tsp. garlic powder

1 tsp. salt

1/2 tsp. black pepper

1/2 cup grated parmesan cheese for tops 

 

Directions

1. Preheat oven to 425 degrees F.

2. Lightly grease two large baking sheets or line with parchment paper. Tightly arrange chips on the sheets, cup side up.

3. In a large bowl, mix together cream cheese, mozzarella, egg, corn, chillies, garlic, salt and pepper.

4. Scoop filling into the chips (about 1 Tbsp. in each one).

5. Sprinkle tops with parmesan cheese.

6. Bake 13-15 minutes or until tops being to brown and cheese is bubbling.

7. Serve warm. Yields 8-10.
