VICTORIAN WATERCRESS TEA SANDWICH RECIPE

8-16 servings
Ingredients
4 large hard boiled eggs
4 Tbsp herbed butter *(unsalted works)
4 Tbsp mayonnaise (any form)
1/2 cup chopped watercress (arugula works too)
salt, ground pepper and paprika to taste
8 slices of bread
Optional chopped parsley to taste
1. Peel hard boiled eggs, discard shells. Mash eggs with butter with a potato masher or folk until crumbly.
2. Stir in mayonnaise and spices.
3. Spread egg salad on four bread slices evenly.
4. Layer watercress and parsley on top of egg salad. Place the remaining four pieces of bread on top of the egg/watercress/bread, making a sandwich.
5. Cut off crusts, and diagonally slice the sandwiches.
Serve!
